Coconut and Chia Pudding


  • (4 Servings)
  • 1 Can of Coconut Milk
  • 1/4 Cup of Chia Seeds
  • 1/4 Cup of Berries
  • 1 tsp of Vanilla Extract
  • Stevia to taste

  • Carbohydrates: 12 grams
  • Net Carbohydrates: 4 grams
  • Protein: 6 grams
  • Total Calories: 287 Cals


  1. Combine the coconut milk, chia seeds and vanilla extract in a bowl. Don’t add in the berries. Combine well and then place the mixture into a sealed container.
  2. Allow the chia seed pudding to chill in the refrigerator for three hours or it can sit overnight.
  3. Once it has finished chilling you can divide it into 4 servings and add a handful of berries on top.
